Our arugula variety is Esmee, which is a toothed variety a bit more like wild arugula. I love it for its flavor and the fact that it doesn't go to seed as fast in the field. This is the real deal, not that mild pale green stuff from the store that turns yellow and dies if you don't eat it in two days.
Try my favorite arugula salad recipe:
1/4 lb. arugula
small squares of watermelon
2 tablespoons feta cheese
drizzle of reduced balsamic vinegar (find it in the salad area of the supermarket)
Lay the greens, top with watermelon, sprinkle feta, drizzle dressing. It's peppery, sweet, salty, bitter, and sour, all on one forkful. Divine.
